Take your thawed Fillet Mignon out of the fridge for about 20 minutes, before cooking, to get close to room temperature. This ensures your steak cooks evenly. Rub lightly with a little olive oil, and cover with a simple salt & pepper rub. Cook upwards of 130 F. Just remember, organic grass-fed’s healthier, lean meat, cooks about 30 percent faster than grain fed beef. Enjoy
