Take your thawed Fillet Mignon out of the fridge for about 20 minutes, before cooking, to get close to room temperature. This ensures your steak cooks evenly. Rub lightly with a little olive oil, and cover with a simple salt & pepper rub. Cook upwards of 130 F.
